Lavender Doughnuts
Holy smokes, how beautiful is this? I'm so excited for this weeks lavender recipe highlight. I recently found a beautiful blog called Gourmantine and woah is it ever beautiful. Slow Cooker Mexican Chicken with Quinoa & Sweet Corn
When I think of Peggy's cooking, the last thing I think about is a crock pot. She probably dies a little inside every time this blog has a slow cooker recipe on it. But lets get real, in today's busy fast paced life, sometimes you only get 20 minutes in your day to throw a meal together, and it most likely isn't near meal time. So a crock pot can be a life saver for busy moms. Just tell the foodie inside of you to look the other way. This recipe will certainly not go down in our blog history for most beautiful, but it is definitely delicious. And coming together in less than 5 minutes of prep? How can you say no to that? 


Ingredients: 
2 frozen chicken breasts
2 cups salsa
2 cups chicken broth 
8 ounces quinoa 
1 can black beans, rinsed and drained
2 ears corn, trimmed
1 cup cheese, shredded 
1 tsp cumin
1/2 tsp salt
1/4 tsp pepper
1 avacado, diced
2 tsp cilantro, minced
1 lime

Directions: Place your chicken breasts in the slow cooker, add your salsa, broth, quinoa, beans, corn, cheese, salt, and pepper. Cook on high for 4 hours. Pull apart your chicken into bite sized pieces. Mix in the juice of 1 lime. Top with avacado and cilantro. 

This dish is super simple, so fast, and extremely flavorful.

Healthy Chocolate Chip Cookies with Chick Peas
I think we actually should have named my son Cookie Monster. This kid loves cookies. When we go shopping, rather than wanting to head to the toy section, he wants to head to the bakery to grab a cookie. If you're a mom like me, then you probably have to worry about the amount of cookies that your kids (and probably you too) are consuming. Well here is a recipe that can help you feel better about your sweet tooth. These cookies are low in fat and sugar, and actually pack a healthy and fun crunch in the form of chick peas! More vitamins and protein in my cookies? I'm sold. And your kids will be none the wiser. 


Ingredients: 
1 1/4 cup packed brown sugar
1/2 cup butter
2 eggs
2 tsp vanilla
2 cups flour
1/2 cup oats
1 tsp baking soda
1/4 tsp salt 
16 ounce can chick peas, drained and rinsed 
2 cups chocolate chips

Directions: Mix ingredients in a mixer in order listed. Bake at 350 degrees for 12-13 minutes. Serve and consume within 24 hours.

Who else is loves with the Pioneer Woman? Ree is the type of woman you watch on TV and just know that if you met her in real life, you would be great friends. She just always seems so happy and upbeat, and her cooking philosophy is all about what tastes good, rather than what is fussy or fancy. Love love love her.
