Tips for Cooking with Lavender

I'll admit, before we had a family lavender farm, I had never used lavender in my cooking before. I assumed it tasted soapy, and I wasn't really sure how or why to go about using it. My how times have changed! I love using lavender in my cooking and it really elevates your cooking. Lavender is such a powerhouse to have in your culinary arsenal. 

Just a few tips: 

1. Make sure you always use culinary lavender. Culinary lavender is suitable for consumtion, while ornamental lavender may have been processed differently and may taste a little off. 

2. If you are new to lavender and not sure you want to use full buds, you can start with lavender infused sugars or salts. You could even grind your buds into a powder if that makes you more comfortable. 

3. A little goes a long way. You never want to be too heavy handed with your lavender. It's fragrant and can transform a dish when used properly, just use restraint and keep it at "just a hint".

Passover Popovers
Popovers are such a wonderful spring tradition. Since easter comes early this year, we have already begun to think about bunnies, rabbits, and not to mention all the candy.... But one of our favorite easter traditions are popovers. These can easily be turned into a lesson for your children and represent the empty tomb during Jesus's resurrection.  

As an added benefit, these popovers are fluffy, buttery, and and simple to make! The best part about this particular popover recipe is that you can utilize just a regular old muffin tin rather than purchasing a fancy popover pan. The less gadgets cluttering your kitchen, the better, right?

Ingredients:
1 cup whole milk
2 eggs
tablespoon butter, melted 
1 cup flour
1/4 teaspoon salt

In a blender, mix everything together until it looks frothy. Let the popover batter rest while the oven pre-heats to 450 degrees. Use a large muffin tin pan that serves 6. Put the empty muffin tin in the oven for 2 minutes to warm it up. Remove it from the oven and melt an extra 2 tablespoons of butter in the microwave, and then divide the butter between the cups. Pulse the batter in the blender once more to make it bubble and then fill each cup. Bake for 15 minutes. Resist the urge to open the oven door while they bake or you will unpop your popovers. Reduce the heat to 350 degrees and bake for another 15 minutes. Your popovers should be golden brown and dry to the touch and sound hollow when you tap on them. 


Eat and enjoy! I'm hungry just thinking about it! 
Hibernation
I know we posted some beautiful spring photos recently about our lovely lavender gate that will greet you when you come visit the Lavender Apple Farm. But this time of year, our lane looks a little bit more like the photo below, than  the beautifully floral greenery you are used to seeing on this blog. We were surprised that our lavender grew so well in such a harsh climate, but our rocky sloped soil is actually a perfect match for these resilient purple flowers. 


And while winter has its place and is beautiful too, we dearly miss our lavender blooms.
